For deliveries between 17 and 19 December, the best before date will be 29 December.

For deliveries between 20 and 23 December, the best before date will be 2 January.

This exquisite Beef Whole Tenderloin is sourced from grass-fed Angus cattle raised on the pristine pastures of King Island. Renowned for its exceptionally tender and lean texture, this is the most delicate cut of beef, offering a subtle, buttery flavour that is both refined and satisfying. It is raised without antibiotics or hormones and delivered to us chilled to ensure optimal quality.

Cooking Instructions:

  • Remove the tenderloin from refrigeration and let it rest at room temperature for 45-60 minutes before cooking.
  • Preheat your oven to 200°C (400°F).
  • Pat the meat dry and season generously with salt and pepper.
  • Sear the tenderloin on all sides in a hot, oiled oven-proof skillet until a rich, brown crust forms.
  • Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the internal temperature reaches 50-52°C (122-125°F) for rare or 55-57°C (131-135°F) for medium-rare.
  • Let the tenderloin rest for 10-15 minutes before carving into thick, elegant medallions.
