A mountain cheese of exceptional pedigree from the French Alps, Beaufort Summer “La Plagne 1800m” is crafted from raw cow’s milk during the summer grazing season at high altitude, where the diverse wildflowers impart extraordinary aromatic complexity . Awarded AOC status in 1968 and later PDO recognition, this distinctive concave wheel develops a firm, smooth paste with a rich, buttery flavor and lingering notes of toasted hazelnut and alpine flora . Aged for a minimum of 12 months, it is equally celebrated on a rustic cheese board or melted into the region’s classic fondues and gratins . Pair with a white Roussette de Savoie or a light red from the Côte de Beaune to complement its richness without overpowering its delicate mountain character .
