The Beaufort Chalet d’Alpage is the rarest type of Beaufort you can find: only 10.000 pieces are produced every year! This cheese is produced and aged by an exclusive number of farmers, at a minimum of 1500m above sea levels, only during Summer period.

The milk used to produce the cheese comes solely from a single cow herd. Cheese originating from herds grazing in a high-altitude environment benefit from the green and unpolluted pastures. This high-quality grazing allows for a fragrant, elegant and unique cheese.
The AOP “Beaufort Chalet d’Alpage” is one of the most stringent appellation for cheese. The one we propose in limited quantities has been aged by famous cheese monger Joseph Paccard and won the golden medal from the “Concours General agricole de Paris”.
