Renowned since the 10th century and once called “strachin” because it was traditionally made from the milk of cows returning from pasture—“stracche” (tired)—Taleggio is not only an exceptional cheese but also a versatile ingredient in the kitchen. Mauri Dairy is world-famous for its Taleggio, aged in the natural caves of Pasturo at temperatures between 2 and 6 °C for a minimum of 45 days.
Taleggio is a semi-soft cheese with a thin, edible rind. It offers a mild, fruity flavour with a subtle tangy edge and a distinctive strong aroma. Thanks to its excellent melting properties, Taleggio works beautifully in risotto, polenta, and a variety of delicious dishes.

Store it in the refrigerator for up to a couple of weeks. To keep its rind soft, it is recommended to wrap the cheese in a damp cloth.
