Pecorino is one of the oldest cheeses, already described in Ancient Rome. The cheese takes its name from the word pecora meaning ‘sheep’ in Italian. With its pungent soft spices and seared butter fragrance, Pecorino is bursting with character. It has a hard and crumbly texture and presents ever-stronger flavours as seasons pass. Its rind is waxed and inedible. Enjoy it with a glass of Barolo or Syrah from France to please your palate.
