In the Middle Ages and Renaissance, these vinegars were favored by the aristocracy not only for their refined taste, but also for their perceived potential to mitigate the impacts of the plague.
Made from 60% cooked grape must and 40% wine, aged in oak barrels. Tangy, sweet flavour, with strong acidity.
