U Girandulone

U Girandulone is a rustic Corsican cheese crafted by Fromagerie Don Simoni, a family-run producer known for preserving traditional island cheesemaking methods. Its name, which loosely translates from Corsican as “the wanderer” or “roamer,” reflects the nomadic grazing of local herds across the island’s rugged landscape. Made from a blend of sheep’s and/or goat’s milk depending on the season, this cheese captures the biodiversity and character of the Corsican maquis where the animals feed.

It has a natural, slightly wrinkled rind and a dense, creamy interior that softens with age. The flavour is full and expressive—mildly tangy when young, evolving into a stronger, more pungent profile over time. Earthy and herbaceous notes emerge as the cheese matures, giving it an unmistakable sense of place.

Pair with Patrimoniu AOP, Domaine Montemagni, Menhir Rouge. This structured Corsican red enhances the cheese’s boldness and depth, while its aromatic Mediterranean character creates harmony with the cheese’s grassy, wild notes.
