Fromagerie Baechler, based in the Périgord region, has built a reputation for marrying tradition with creativity, and their Tomme des Croquants with Truffle is a perfect example. Revived in 2005 by master cheesemaker Frédéric Villefer, this semi‑hard cheese pays homage to the “Croquants,” the rebellious peasants of the 16th and 17th centuries who resisted heavy taxation in southwest France, a name now carried with pride. 

The cheese itself is striking: a delicate white rind encases a silky, supple paste marbled with flakes of black truffle. Washed during aging with nut liquor and caramel, it develops fruity notes layered with a subtle nuttiness, while the truffle adds deep earthy aromas and rich umami that elevate the creamy base into something elegant and complex. The flavor journey moves from milky sweetness to savory depth, finishing with a lingering truffle perfume that feels both rustic and refined.

On the cheese board, it shines best alongside milder companions, allowing its complexity to take center stage. It pairs beautifully with Burgundian Pinot Noir or structured Bordeaux reds such as Côteaux Bourguignons AOC Vignerons de Buxy 2020 and Saint‑Estèphe AOC Château Le Boscq 2018, each drawing out different facets of its layered character.
