Founded in 1928 by Swiss cheesemaker Charles Baechler, Fromagerie Baechler established itself at Domaine de Broc in Lot‑et‑Garonne, bringing Vaud traditions into the heart of southwest France. Over the decades, the house has become a reference point for artisanal excellence, combining respect for terroir with a spirit of innovation. Among its award‑winning creations, the Tomme des Croquants stands out as a true emblem of this savoir‑faire.

Crafted from whole pasteurized cow’s milk using traditional uncooked pressed methods, it is ripened for six to eight weeks until it develops a soft, supple texture and a delicate nutty profile. The rind, rubbed three times with walnut liqueur from the Sarlat Distillery in Périgord, adds aromatic depth and a subtle gourmand lift.

The result is a cheese that moves gracefully from milky sweetness to nutty richness, with a lingering walnut perfume that feels both rustic and refined. Its quality has been recognized with a silver medal at the Concours Général Agricole de Paris in 2018 and a gold medal at Fromonval ENIL in 2022. 

Tomme des Croquants makes a striking centerpiece at the table, best enjoyed with fresh bread and structured reds such as  Saint-Estèphe, Les Pélerins, Château Lafon-Rochet (2019) , which draw out its layered character.
