​Fromagerie Beillevaire, founded by Pascal Beillevaire in Machecoul, Loire-Atlantique, has grown from a family dairy into a renowned producer of artisanal cheeses. The Saint-Paterne cheese, crafted by Beillevaire, is a soft, washed-rind cheese made from raw cow’s milk. It undergoes a minimum ageing period of 15 days, during which its rind is regularly washed to develop its characteristic flavour and texture. ​
Saint-Paterne presents a creamy, supple texture with a slightly sticky orange-hued rind. Its aroma is robust, offering earthy and lactic notes. On the palate, it delivers a rich, savoury taste with a hint of sweetness, balanced by a mild tanginess. The cheese’s interior is smooth and luscious, providing a satisfying mouthfeel.
This cheese pairs beautifully with the Lalande-de-Pomerol AOC, Château Grand Ormeau, 2019. The wine’s ripe red fruit, subtle spice, and soft tannins echo the creamy depth of the cheese, while its freshness helps lift the finish, creating a comforting and well-balanced experience.
