Legends has it that, while returning from his Egypt military campaign, Napoleon Bonaparte visited the Prince of Valencay castle. To not bore him with old and bad memories, the Prince decided to cut all tops of Pyramide de Touraine. Since this episode, this AOC cheese has always been made with a flattened top. Made with raw goat’s milk and coated with ash, it has floral and goatty notes on the nose. In the mouth, the cheese is creamy, delicate, lactic with acidulous citrus aroma and dry hay hints.
