After reaching two years old, every Parmigiano-Reggiano wheels are carefully analysed by the Italian Consortium Parmesan Cheese, a group of farmers and cheese producers who work together to promote and protect the Parmigiano Reggiano standards. Only a few exceptional wheels selected by the Consortium are allowed to pursue their maturation process up to 7 years. This 5 years PDO Parmigiano made by the awarded Parmesan specialist Bonat reveals superb nutty and smoky flavours. A real sensitive experience.
