Ossau-Iraty unites 2 regions of France: the Pyrénées Area with the Ossau Valley of Béarn and the Iraty forest of the Basque country. This emblematic AOC cheese is only made with the local Manech and Basco-Béarnaise goat’s milk.
Its Hard texture is slightly elastic and its rind is light brown to grey in colour. Herbaceous, nutty, and a bit fruity, Ossau-Iraty paste is buttery in the mouth. You can add some sweetness with a traditional Basque black cherry jam to this cheese.
Store in the fridge and consume within 2 weeks.
