Produced in the region of Castilla la Mancha, Manchego is the King of Spanish cheese, especially since the Spanish poet Cervantes mentioned it in the famous adventures of Don Quixote.
Made from the rich and thick milk of the Manchega sheep breed that grazes on the shrubs of the vast plateaus of the Dehesa, Manchego shows all the Mancha character. Manchego gets its rustic look after its specific rind pattern.
We recommend you to try it with some Iberico Ham and a glass of Tempranillo that will highlight its intense and generous flavours.
Red wines (Cabernet Sauvignon, Rioja)
White wines (Chardonnay, Pinot Gris, Verdejo)
