L’Écir de l’Aubrac is made by Jeune Montagne, a cooperative rooted in the rugged Aubrac plateau of southern France. Born in the 1980s, the cheese takes its name from the “écir”—a brisk wind characteristic of the region. Crafted with raw milk from local cows, it reflects the cooperative’s commitment to preserving traditional methods and the identity of this highland area.
Small and soft with a fine bloomy rind, L’Écir reveals a creamy, smooth centre that melts easily on the tongue. It has a delicate, lactic taste with faint earthy notes and a mild aroma that stays gentle and clean. The texture is luxurious yet light, making it approachable and satisfying.
Pair it with the Languedoc AOC, Château Capion Blanc, 2020. This white wine from Occitanie offers fresh stone fruit and citrus notes with a hint of minerality, which complement the cheese’s soft, milky richness and create a refreshing, well-balanced match.
