The tradition of washing cheeses with beer finds one of its finest expressions in Lyon, thanks to the unique collaboration between the renowned Brasserie George and cheese master Cristian Janier. This cheese is a true tribute to their shared artisanal excellence.
This distinguished cheese is crafted for the most curious palates. During its affinage, it is regularly rubbed with a rich, dark brown ale from Brasserie George, the oldest brewery in Lyon. This process nurtures the development of a distinctive, slightly sticky orange rind. Beneath this aromatic crust lies a supple, ivory-coloured paste.
The flavour is a masterful balance: robust and complex, with pronounced notes of malt, cellar, and a hint of hops from the beer, beautifully rounded out by a deep, buttery, and slightly sweet finish from the cheese itself.
Le Georges reveals its full Lyonnais character on a cheese board. Enjoy it paired with rosette de Lyon sausage, a classic cervelle de canut, or simply with slices of dark rye bread. It also melts superbly into a traditional grilled cheese or atop a comforting French onion soup.
Can be stored in the fridge for up to 4 weeks. For the best experience, take it out of the refrigerator at least 45 minutes before serving.
