Cooking Instructions:

• Remove the lamb rack from the fridge and let it come to room temperature for about 30 minutes.
• Preheat your oven to 180°.
• Season the rack generously with salt, pepper, garlic, and fresh herbs such as rosemary or thyme.
• Heat an oven-safe skillet over medium-high heat and sear the lamb rack on all sides for about 3-4 minutes.
• Transfer the skillet to the oven and roast for 15-20 minutes for medium-rare (internal temperature around 57°).
• Remove from oven and tent loosely with foil; let rest for 10 minutes before carving.
