Laguiole Fermier is a traditional raw cow’s milk cheese made exclusively on farms in the Aubrac region of southern France. Crafted according to strict AOP standards, it uses milk from cows raised on high-altitude pastures and is made using a process that includes slow curdling, pressing, and long ageing—often for several months. This artisanal method results in a cheese that reflects the natural rhythm of the land and the quality of the raw milk used.
The cheese has a firm yet supple texture, with a natural rind and a pale, golden interior. Its taste is full and balanced, with subtle grassy and nutty notes. As it matures, the character deepens, becoming more complex without turning sharp. The mouthfeel is dense but smooth, with a lingering savouriness.
Enjoy it with Terrasses du Larzac AOC, Château Capion Rouge, 2020. The wine’s dark fruit, herbal lift, and smooth structure match the depth and firmness of the cheese, creating a rustic and generous pairing that speaks to their shared regional roots.
