The result is a dark brown rustic rind, pale yellow paste and a unique, full taste with fine spicy caramel notes and a slightly crumbly texture.
We recommend you to eat it alongside a floral dark honey or peach jam for a snack or grate into a pear and arugula salad for a sweet and savoury pairing.
