Le Rayon d’Or is a family-run beekeeping operation located in the Pyrenean foothills, where bees forage on a mix of wildflowers, acacia, and mountain flora. With a deep respect for the rhythms of nature, the producers rely on traditional, low-intervention methods—no heat treatment, no additives, just raw honey carefully harvested and gently stirred to create this creamy texture. The creamed variety is not whipped but slowly crystallised to develop its smooth consistency, a method that keeps all the taste and nutrients of the original honey while making it easier to spread.
This honey is pale gold with a soft, buttery texture that melts easily on warm toast. It has a mild, floral aroma with notes of fresh pollen and spring blossoms. On the palate, it’s gentle and balanced—sweet without being cloying, with a light waxy note and a clean, silky finish. Its texture is firm but yielding, almost like soft butter, making it ideal for spreading without dripping or mess.
Pair it with a piece of Saint-Nectaire. The creamy, washed-rind cheese brings a savoury note that blends effortlessly with the soft sweetness of the honey. Spread both on rustic bread, or enjoy them together with slices of crisp apple for a simple but elegant snack.
