Originally from Central and Southern Italy, areas using a lot of fresh Mediterranean vegetables, such as tomato, zucchini, or peas, Rigatoni are mostly used in the well-know Italian soup “Minestrone”. Their name comes from the Italian “Rigati”, which means “striated” in English.
Perfect as a summer dinner with fresh vegetables in a soup, in a pasta dish or baked in your oven as a gratin.
