A staple of Lyon gastronomy, this fresh sausage is made from high-quality fresh pork sourced from the Auvergne – Rhône-Alpes region, expertly blended with a rigorously selected seasoning mix. It is then stuffed into a natural beef casing and gently steamed to preserve its moisture and tenderness.

Basic Cooking Instructions:

  • Pan-fry: Slice the steamed sausage into rounds and pan-fry over medium heat until golden and slightly crispy for added texture and flavour complexity.
  • Grill: Grill the sausage for 10-15 minutes, turning regularly to develop smoky, charred notes and attractive grill marks.
  • Bake: Roast in a preheated oven at 180°C for about 25 minutes, turning halfway through, to achieve even cooking with a succulent interior.
  • Serve cold: After steaming and chilling, slice thinly to enjoy as part of a charcuterie board or gourmet sandwiches.

How to eat?

Simmer for 30 to 40 minutes. Consume well cooked. To preserve taste and shape, do not prick with a fork.
