Gatine area is like a promised land as it is a breeding region in the West of France where apple and chestnut trees thrive. Etoile de Gatine is shaped like a perfect star. It has a thin natural chalky white rind that can become slightly blue green with age and a lovely fudgy consistency. The interior paste, pure white in colour, is mild and clean. It is goatty, gets some lactic tang note and gets a buttery taste after aging a bit.
