D – Languedoc AOC, Château Capion Blanc, 2018

Château Capion, located near Aniane in the Languedoc, is part of a new wave of estates redefining quality in this vast southern region. The estate itself has roots going back to the 16th century, but its most recent chapter began in 2016 with a commitment to organic farming and precise, expressive winemaking. The Languedoc AOC, often associated with reds, has seen a rise in serious whites over the past decade, particularly from producers like Capion who take full advantage of the cooler microclimates and limestone-rich soils surrounding the Cévennes foothills.

The Château Capion Blanc is a blend of Roussanne, Viognier, and Clairette. Bright straw in colour, the wine gives off aromas of citrus blossom, ripe pear, and a light note of honey. The palate is round yet fresh, with flavours of white peach, melon, and a subtle touch of spice. There’s a soft, almost waxy texture that adds depth, while a gentle mineral note keeps things crisp and balanced. It finishes clean, with a lingering echo of orchard fruit and herbs.

Pair it with a wedge of Pérail de Brebis. This creamy sheep’s milk cheese has a delicate, slightly tangy edge that lifts the fruit and floral elements of the wine, while its rich texture mirrors the roundness of the blend. The result is a smooth and harmonious match.
