Their Côtes du Jura AOC, Vin de Paille is a rare, naturally sweet dessert wine made from hand-picked Savagnin, Chardonnay, and Poulsard grapes. The grapes are carefully withered on straw for four months, concentrating sugars before slow fermentation and three years’ aging in oak barrels without mutage.
This wine reveals enticing aromas of candied fruits, blonde caramel, honey, and cinnamon, balanced by fresh acidity. On the palate, it offers elegant sweetness evolving into complex flavors with a lively, balanced finish.
Perfect for aperitifs, it pairs beautifully with stuffed pigeon, foie gras, chocolate desserts, and strong cheeses like Roquefort. Serve chilled at 8 °C and enjoy its remarkable aging potential of 15 to 50 years.
