In the past, farmers created the ‘Jura wheels’ to keep the milk longer during winters and allow their families to get a protein source all year long. These wheels were also easier to carry around and to sell. The recipe of the Comté we know nowadays was introduced in the 18th century. Comté has the highest production of all French AOC cheeses. No surprise it is also one of our best sellers! The Comté aged 18 months has a slight fruity taste with a soft and creamy paste. The older the Comté is, the stronger is the flavour, so this one is lighter than the Comté aged 24 months.
Can be stored in the fridge for up to 5 weeks.
