In the past, farmers created the ‘Jura wheels’ to keep the milk longer during the winter and have this protein source all year long for all their family. These wheels were easier to carry around and to sell. the recipe of the Comté we know nowadays was introduced in the 18th century.
Our 30 months aged Comté aged has a fruity and nutty taste with a silky hard texture with crystals salt. The older the Comté is, the stronger the flavour is too. So this Comté is more intense than the Comté aged 24 months. Did you know? Comté has the highest production of all French AOC cheese!
