In the past, farmers created the ”Jura wheel’s” to keep the milk longer during the winter and have this protein source all year long for all their family. These wheels were easier to carry around and to sell. The recipe of the Comté we know nowadays was introduced in the 18th century.
This 24 months aged AOC Comté has a frank fruity and spicy taste with a semi-hard but still creamy paste. During the maturation process, salty crystals can develop in the paste, sign of a good ripening method.
Red wine, especially Burgundy (Puligny Montrachet, Meursault)
