Hailing from the Alpine valleys of Savoie, Chevrotin has earned its rare AOC status. Farmers use raw milk from local Rove and Alpine goats, then age the wheels on spruce boards. This fermier version, crafted by small-scale herders, captures pure mountain terroir in every bite.
Serve with a crisp Sauvignon Blanc or dry Jura white. Pair with fig jam, honey, or roasted beets. Melt onto buckwheat crepes or crumble over a warm lentil salad. For a simple feast, drizzle with olive oil and black pepper, then serve with walnut bread.
