Exclusively made by the Fromagerie de Saint-Flour in Auvergne, Carré d’Aurillac is a truly surprising cheese! This mellow to creamy blue-veined cheese is very discreet while young but gains remarkable intensity during its maturation. The raw cow’s milk is delicately mixed with Penicillium Roqueforti before being curdled, drained, molded, and salted.
Slightly sticky, unctuous, and creamy, it offers a delicious milky and buttery flavour with a subtle hint of salt and mushroom cellar notes that lend it true authenticity.
Perfectly paired with a mango chutney for a wonderful and balanced tasting experience.
