Exclusively made by the Fromagerie de Saint-Flour in Auvergne, Carré d’Aurillac is a surprising cheese! This mellow to creamy blue veined cheese is discreet while young and gains a lot of intensity during its maturation. The raw cow’s milk is delicately mixed with Penicillium Roqueforti before being curdled, drained, moulded and salted.
Slightly sticky, unctuous and creamy, it has a delicious milky and buttery flavour, hint of salt and amazing mushroom cellar notes that brings it authenticity.
Perfectly paired with a mango chutney for a wonderful experience.
