Cantal Entre-deux is a semi-hard cheese from the Auvergne region of France. It is often reffered to as the grandfather of all cheeses as the cheese has been produced in the region for over 2,000 years.

It is called “Entre-deux”, litterally “between the two” because of its maturation time. There are 3 kinds of Cantal: the young one aged between 1 and 2 months, ‘Entre deux’ aged between 3 and 7 months, and the oldest one called ‘Vieux’ aged for 8 months minimum.

The cheese features hazelnut hints with a citrusy and fruity finish. Its aroma is a bit more marked than younger Cantal and has some some toasted brioche notes.
