​Cabra da Beira Baixa is a traditional Portuguese cheese hailing from the Beira Baixa region in central Portugal, an area renowned for its rich cheesemaking heritage. Crafted exclusively from raw goat’s milk using animal rennet, this cheese undergoes a meticulous production process that preserves the region’s time-honoured methods. Each wheel is aged for a minimum of 60 days, allowing the flavours to develop fully.​
Visually, Cabra da Beira Baixa showcases a washed, light yellow rind encasing a soft, almost runny interior. The aroma is subtly earthy with hints of fresh grass. On the palate, it offers a mild, nutty taste accompanied by characteristic goaty undertones and delicate piquant grassy notes. The texture is creamy and smooth, providing a delightful mouthfeel.​
