Brun de Noix is a raw cow milk produced in Loire Atlantic. The cheese has a supple and chewy paste with a delicate milk and walnut taste. This taste is brought by the different wash during the maturation period. The producer washes the cheese with some brou de Noix which is a walnut liquor. The rind is amber brown also because of the wash.
