Bleu de la Gruyère is a recent cheese created by Maxime Uldry with the help of his father Pierre in their family dairy of Pont-la-Ville. Bleu de la Gruyère is one of the few blue cheeses made from cow’s milk produced in Switzerland. Its name comes from the lake of Gruyere in the canton of Fribourg in Switzerland near which it is made.
Bleu de la Gruyère has a semi-hard consistency. Its paste is unctuous, white to ivory in colour and marbled with irregular blue moulds. Its taste is assertive but light-bodied with a slight bitterness. Its typical but very mild taste reflects the character of Gruyèranos, the inhabitants of the region.
Bleu de la Gruyère can be served on a cheese table or as an aperitif. It can also enhance your salads. Do not hesitate to accompany it with nuts! It also goes very well with a Chenin Blanc wine.
