Created recently by Maxime Uldry with the help of his father Pierre in their family dairy at Pont-la-Ville, this blue cheese is one of the few made from cow’s milk in Switzerland. Its name derives from the lake of Gruyère, located in the canton of Fribourg, near where it is produced.
It has a semi-hard consistency, with a paste that is unctuous, white to ivory in colour and beautifully marbled with irregular blue moulds. The flavour is assertive yet light-bodied, featuring a slight bitterness and a mild character that reflects the spirit of the Gruyèranos, the region’s inhabitants.
This cheese is perfect served on a cheese board or as an aperitif and adds a delightful touch to salads. For a great pairing, try it with nuts or a glass of sweet Sauternes or a rich Chardonnay.
