Authentic dish from Auvergne, made with smashed potatoes, fresh tome and laguiole cheese

Located in the heart of Aubrac, Jeune Montagne produces Aubrac Truffade and is also the main producer of Laguiole AOP cheese made from raw, whole milk.

The Cooperative Fromagère perpetuates the traditional know-how inherited from the monks and buronniers of Aubrac. Retortillat is the truffade of Aubrac: the delicious combination of hash browns, fresh tome made from raw Aubrac milk and matured Laguiole AOP.

The fresh tome brings ropy and cheese taste, the refined Laguiole comes to forge the character of this traditional dish.
