The monks proudly employ age-old techniques, ensuring the production of a truly distinctive and delectable cheese. With each wheel of Abbaye de Citeaux, one can taste the legacy of centuries-old craftsmanship and the dedication of the monastic community.
Abbaye de Cîteaux cheese reveals all its qualities at the end of a two-month ripening period. The texture becomes creamy and the skin is covered with a fine, almost transparent, white foamy down. This cheese has a delicate, predominantly floral taste.
It can be enjoyed on its own with a toast of bread, but it is also perfect for “Citeaux-flette”: a revisited tartiflette. With potatoes, bacon bits, onions and melted Citeaux cheese on top.
Store it in the refrigerator, wrapped in parchment paper, and consume within a few weeks of purchasing for optimal freshness and flavour.
