A – Saint-Guilhem-Le-Désert IGP, Domaine Capion Blanc, 2019

Domaine Capion lies just outside the medieval village of Saint-Guilhem-le-Désert, a place known for its stone abbey, winding mountain trails, and centuries-old connection to winemaking. While the estate’s origins date back to the 16th century, it was revitalised in the 1990s and again more recently with a shift to organic farming and a tighter focus on quality. The Saint-Guilhem-le-Désert IGP, with its flexible rules and varied terrain, allows producers like Capion to create whites with real personality—often blending Rhône varieties to reflect the region’s sunny days and cooler nights.

This 2019 white is made from Viognier, Roussanne, and Clairette. It pours a soft golden hue and opens with gentle notes of apricot, white flowers, and a hint of citrus. On the palate, it’s smooth and full without being heavy, with ripe peach, almond, and a touch of fresh herbs. There’s enough acidity to keep it lively, and the texture is rounded, almost silky, with a subtle mineral finish that gives it a sense of direction.

Pair it with a slice of Salers. This firm, cow’s milk cheese brings a nutty depth and gentle saltiness that plays nicely with the wine’s stone fruit and floral notes. Together, they offer a well-balanced and satisfying contrast.
