Born from the same monastic traditions as its famous cousin aligot, truffade was the sustaining meal of shepherds and harvesters who needed hearty, energy-rich food during long days in the high pastures.

Simply pan-fry until crisp and golden, then serve immediately as a legendary accompaniment to grilled meats, cured hams, or a simple green salad, letting each forkful transport you to the misty, volcanic landscapes of the Aubrac.
