Known since the 13th century, Fontina Val d’Aosta is a classic Italian cheese celebrated for its supple texture and distinctive yellow-brown rind. This PDO cheese is easily recognizable by the official Consortium stamp, ensuring its authenticity. Be careful not to confuse it with other similar cheeses such as Fontella, Fontinella, or Fontal, which are much milder than the original Fontina.

Made from raw cow’s milk sourced from the Val d’Aosta region, the cheese’s flavour ranges from mild and fruity to spicier and floral, depending on its age. Typically aged for around 90 days, Fontina develops a rich bouquet with delightful notes of nuts, sweet brioche, and a gentle earthiness.

This cheese is perfect for sandwiches, thanks to its juicy texture, and also stands out when baked, bringing rich depth to your dishes. Or try it as a sauce for a delicious way to enjoy its creamy melt.
