Cheese Type: Uncooked, Unpressed Blue
Named after the Scottish county where it was first created in the 1970s, the Blue Shropshire was invented by the cheese master Andy Williamson who was looking to make a blue cheese that was less salty than traditional blue cheeses.
This blue cheese is made with raw cow milk and has an orange colour coming from Bixa Orellana natural food-colouring. Its paste is soft and creamy. In the mouth, the Shropshire has a sharp and strong taste, similar to the Stilton cheese but in a creamier version.
It is delicious when spread on a fresh slice of bread or in salads for a bold and tangy touch, and pairs well with red wines such as Merlot or Pinot Noir.
It can be stored in the refrigerator for up to two weeks.
