The cheese’s very name, “Galet,” is a tribute to the smooth, rounded pebbles that line the banks of the Loire River, which is affectionately known as the “Royal River” for its magnificent châteaux . This naming is a poetic nod to the rich local heritage and the stone from which those castles were built, grounding the cheese in its unique geographical and historical context . When you taste it, you encounter a soft ripened paste with a delicate, edible bloomy rind . The flavour is a balanced composition of earthy, mushroom and underwood notes, intertwined with a gentle lactic tang and a subtle, supple nuttiness that becomes more pronounced as it matures .
