Mozzarella originates from Southern Italy and is traditionally produced in only two places: Paestum in the Campania region and Foggia in the Apulia region. Early records show that the Romans were making a similar cheese from sheep’s milk as early as the middle of the first century A.D. With the rise of water buffalo farming in the 16th century, the transition from sheep’s milk mozzarella to mozzarella di bufala occurred. The name “mozzarella” derives from the Italian verb mozzare, meaning “to separate.”
