Created through a unique collaboration between the Fromagerie Les Frères Bernard and the Brasserie des 2 Caps of Christophe Noyon, Le Belle Dalle is a true taste of the Opal Coast. This artisanal cheese is the edible expression of a local partnership, where the brewery’s “Belle Dalle” harvest beer meets a young Mimolette, uniting terroir and savoir-faire from two passionate local producers.
This small, round cheese with its distinctive orange hue features a dense, supple paste. Its thick rind is washed with the local “Belle Dalle” beer, imparting subtle malty and hoppy notes that complement the cheese’s mild, buttery, and slightly nutty flavour. Aged for about four weeks, it is younger and creamier than a traditional Mimolette.
Thanks to its protective rind, this cheese can continue to mature at home for several weeks, allowing its character to deepen. Enjoy it with its brewing partner, a glass of **Belle Dalle beer**, or with a crisp cider. It also pairs wonderfully with rustic bread, charcuterie, or fruit chutneys.
Storage: Keep refrigerated, ideally in a cheese paper or a slightly ventilated container. For continued aging, store in a cool cellar (10-12°C).
