Chimay Abbey Round

Weight: 320

Nestled in the serene countryside of Scourmont Abbey, the monks of Chimay have been dedicated to the art of cheese and beer making since 1876. This peaceful monastic setting, surrounded by lush Belgian pastures, provides the perfect environment for crafting authentic Trappist cheeses using time-honored techniques. With a commitment to quality and tradition, the abbey’s cheesemakers ensure that every wheel of Chimay cheese reflects their heritage and expertise, bringing a piece of their storied craftsmanship to every table.

Chimay Abbey Round is a semi-hard cheese with a natural, uncoloured rind that encases a smooth, creamy interior. Its delicate yet distinctive flavour is reminiscent of freshly baked bread crust and rich, fresh milk, offering a mild yet deeply satisfying taste. Unlike some of its Chimay counterparts, this cheese is produced without beer, relying solely on the richness of its dairy and careful aging process to develop its characteristic aroma and texture.

Enjoy Chimay Rond on its own, paired with crusty bread, or accompanied by fruits and nuts. For the perfect pairing, serve it with a blond Enghien beer, whose malty, slightly fruity notes beautifully complement the cheese’s creamy texture. Alternatively, a light-bodied white wine, such as a Chardonnay or Chenin Blanc, enhances its subtle flavours while maintaining balance and elegance.
