Tomme des Croquants with Nut Liquor

Weight: 200

Maturation: 6-8 weeks

Cheese Type: Uncooked, Pressed cheese

Fromagerie Baechler, founded in 1928 by Swiss cheesemaker Charles Baechler, brought Vaud traditions to France’s Lot-et-Garonne at Domaine de Broc. Renowned for award-winning cheeses, they craft Tomme des Croquants from whole pasteurized cow’s milk using traditional uncooked pressed methods.

Ripened 6-8 weeks, it develops soft supple texture and delicate nutty flavour. The rind is rubbed three times with walnut liqueur from Sarlat Distillery in Périgord, adding aromatic complexity. Silver medal Concours Général Agricole de Paris 2018, gold Fromonval ENIL 2022.

Perfect cheese board centerpiece with fresh bread and a Languedoc red like Terrasses du Larzac AOC, Château Capion Rouge, 2018.
