Unlike ordinary round tomatoes, the Cœur de Boeuf is dense and fleshy rather than watery, making every slice generous and satisfying. Its flavour is mild, aromatic, and subtly sweet, with the authentic depth of a traditional summer tomato.
Slice it thickly for salads and bruschetta, grill or stuff it for a hearty main dish, or cook it into sauces and stews – its dense, low-juice flesh brings rich tomato flavour to every recipe
Keep the tomatoes at room temperature, away from direct sunlight, and do not wash until ready to eat. Refrigeration can dull their aroma and texture, so only refrigerate fully ripe tomatoes.
