Talenus Blue is a distinguished blue cheese produced by Quesos El Pastor, a facmily-owned dairy in Zamora, Spain. This cheese earned a Silver award at the World Cheese Awards 2021-22.
Crafted from a blend of pasteurized cow’s and goat’s milk, it features a white paste interspersed with greenish-blue veins. It emits a slightly lactic aroma with characteristic mouldy notes. The flavour is intense, salty, and piquant, becoming more pronounced with extended maturation. Its smooth texture is punctuated by irregularly distributed veins and cavities.
To complement the robust profile, consider pairing it with sweet wines like Sauternes or Port. The wine’s sweetness balances the saltiness and enhances the complex flavours, offering a harmonious tasting experience.​
