Talenus Blue is a distinguished blue cheese produced by Quesos El Pastor, a family-owned dairy in Zamora, Spain. This cheese has earned recognition, securing a Silver award at the World Cheese Awards 2021-22.
Crafted from a blend of pasteurised cow’s and goat’s milk, Talenus Blue features a white paste interspersed with greenish-blue veins. It emits a slightly lactic aroma with characteristic mouldy notes. The flavour is intense, salty, and piquant, becoming more pronounced with extended maturation. Its smooth texture is punctuated by irregularly distributed veins and cavities.
